I've been trying a bunch of new recipes- but not posting many so I'll try to add a few this week. I got this recipe and picture from best bites. It's super duper easy and quite delicious.
Baked chicken taquitos
Makes 14-16 large taquitos
4 ounces cream cheese, softened
1/4 cup green salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
3 tablespoons chopped cilantro
1 green onion, sliced finely
2 cups shredded cooked chicken
1 cup grated cheese
small yellow or white corn tortillas
salt
cooking spray
Mix all of the wet ingredients together- then add everything else. Spread 2-3tbs of mixture onto one end of tortilla (leaving space on each side) and roll up. Place sealed side down on pan.
If you use corn tortillas- make sure you moisten and heat them (two or three in the microwave for about 30 seconds) or else they are really hard to work with!
Heat oven to 425 degrees. Line a baking sheet with foil and lightly coat with cooking spray. Sprinkle taquitos with salt and and bake until crispy and brown on ends. about 15 minutes.

I thought taquitos are usually fried. I like the fact that yours are baked...are they really crunchy after you bake them? What did you end up serving with them...the normal beans/rice combo? I'm thinking about making some since my Mexican food is all the same.
guac, beans, sour cream, salsa and rice! and they are medium crunchy- still a little soft in the middle. very tasty. just don't let them cook too long!
