I bought a Ginormous eggplant at the farmer's market this week because it looked good?! I ate them in russia a lot- but the russians always did the prep. Any suggestions? I found a highly rated eggplant Parmesan recipe from Allrecipes- but are there any other suggestions? recipes? ideas?



And just for a good laugh. here's the kid putting on sidewalk chalk. Cylindrical = chapstick to Zeb. Such a weirdo. He's done it with sunscreen and glue sticks too.

Eggplant .... hmmm. I have NO clue. Seems like we grew those in our garden growing up ... Kent? Hope you can get a yummy idea. I think we just used to eat them like zuchinni ... steamed and buttered.

the best recipe for those eggplant guys is as follows:

I know you are good at converting kilos into pounds! so I will give the recipe in gramms and kilos (1 kilo-2 pounds, 250 gramm - half a pound PRIMERNO)

1 eggplant
0,3 kilo shredded cheese (choose cheap)

mayo 250 gramm

garlic
pecans (optional)
parsley dill etc.


-peel, cut the eggplant lenghtwise, add salt and leave for 15 min. then press the yacky bitter juice out of the eggplant. rinse.

-fry the slices in a bit of vegetable oil

-press garlic

-mix shredded cheese, mayo, pecans, garlic and some chopped green stuff (parsley, dill) . keep adding mayo until soft but not too spreadable

make rolls - 1 tsp cheese+mayo mixture roll up into 1 slice of eggplant.

You could always do a Mousakka, which is slices of eggplant layered with mince and white sauce.
Otherwise you could make a ratatoui (??) not sure on spelling, which is eggplant, toms, courgette and onion all in a tomato sauce. Google both these and you should find a recipe somewhere.
If not, just slice the eggplant thickly and fry with garlic, my husband loves it this way.

so, this one time Charles took me to a place in Moscow where I ordered a "burrito" which turned out to be a roasted eggplant with some cheese and sour cream. No tortilla or anything remotely burrito-esque about it. So, apparently, sometimes when you try to cook a burrito, it turns into an eggplant. I'd try that. It was pretty good, once I finished grieving my burrito.

I marinate thin slices in olive oil, lemon juice, garlic powder, salt, and pepper, and then grill them. My kids will eat anything with grill marks.

Eggplant....sounds yum! I tried making eggplant lasagna once, but it didn't come out so well. Good luck, and if you find a super yummy recipe, please post it! I have a collection of your recipes on my computer entitled "leisipes!" haha

The best eggplant recipe i have found is the alton brown ones on food network. they require a little bit of prep so they are mushy when you cook them though.

But Zeb I do like and I love that he thinks everything big is chapstick! I think he got it from me. (or I will pretend that he did)
